Espresso or short coffee is obtained by the very rapid passage of hot water through finely ground coffee. It is a coffee extracted in its pure state and offers a very full-bodied cup. It is recognizable by its dark brown colour topped by a fairly firm hazelnut-coloured froth called “crema”.
Long or American coffee
Long coffee is simply one shot of espresso with two shots of hot water. In general, lovers of this coffee choose it for its less full-bodied taste.
Cappuccino is a perfect balance of equal parts espresso, milk and milk foam sprinkled with chocolate.
Macchiato is simply a dose of espresso to which milk foam is added.
Coffee with milk
There are different variants of café au lait. Latte is made up of espresso, two doses of hot milk and milk foam. Flat White is similar to Latte except without the milk foam.
For the more gourmet, there is Mocaccino, a blend of espresso, hot milk, chocolate syrup and whipped cream, or Affogato, which consists of pouring an espresso over vanilla ice cream.
